Honey Whipped Feta with Garlic Herb Roasted Olives Dip

Ingredients
For the Roasted Olives:
2 cups mixed olives, pitted
⅓ cup extra virgin olive oil
6 cloves garlic, smashed
1 shallot, quartered
1 lemon, quartered
2 sprigs fresh thyme
2 sprigs fresh oregano
Chili flakes, to taste
For the Honey Whipped Feta:
1 8-ounce block feta cheese
3-ounces cream cheese, at room temperature
2 to 3 tbsp. honey
Black pepper, to taste
Bread or crackers, for serving
Instructions
To prepare the roasted olives:
Pre-heat the oven to 450° F.
In a baking dish, combine the olives, olive oil, garlic, shallot, lemon, thyme, oregano and a big pinch of chili flakes.
Place in the pre-heated oven and bake 20 to 25 minutes or until the garlic turns golden and the oil is sizzling.
To prepare the honey whipped feta:
In a food processer, combine all ingredients in a food processor and pulse until smooth and creamy.
The feta can be made ahead; covered in an airtight container; placed in the refrigeration for up to 3 days.
To assemble and serve:
When ready to use, spoon the feta into a serving bowl and top with the warm olives.
Serve with bread or crackers.
