Old-Fashioned Salmon Patties

Ingredients
  

  • 1 14.75-ounce canned salmon
  • 2 eggs, beaten
  • ¼ cup whole milk
  • ¼ tsp. salt
  • ⅛ tsp. pepper
  • ½ cup Ritz cracker crumbs
  • 6 tbsp. olive oil or butter

Instructions
 

  • Drain salmon; remove bones and skin.
  • Flake salmon with a fork.
  • In a medium bowl. mix eggs and milk; add salmon; mix thoroughly.
  • Add salt, pepper and cracker crumbs; combine well.
  • Using your hands, form into large patties; set aside.
  • In a medium skillet, over medium heat, melt olive oil or butter.
  • Brown patties on first side; flip and brown on the second side.
  • Remove from the skillet, place on a bun; serve.
  • Alternatively , serve as an entree with a salad or vegetable of choice.
