Drain salmon; remove bones and skin.
Flake salmon with a fork.
In a medium bowl. mix eggs and milk; add salmon; mix thoroughly.
Add salt, pepper and cracker crumbs; combine well.
Using your hands, form into large patties; set aside.
In a medium skillet, over medium heat, melt olive oil or butter.
Brown patties on first side; flip and brown on the second side.
Remove from the skillet, place on a bun; serve.
Alternatively , serve as an entree with a salad or vegetable of choice.
