Brush both sides of each pork chop generously with olive oil.
Press each pork chop firmly into the Parmesan-breadcrumb mixture; ensuring both sides are fully coated.
Arrange the coated chops on the prepared baking sheet, spacing them about 1-inch apart.
Place the pork chops in the pre-heated oven and bake for 20 to 25 minutes or until they are golden brown and the internal temperature registers at 145°F.
Rotate the pan halfway through baking for even cooking.
Remove from the oven and allow the pork chops to rest for 5 minutes before serving; this allows the juices to redistribute, keeping the meat tender and flavorful.
Garnish with fresh parsley, if desired.
