Roast Pork with Black Beans and Yellow Rice

Ingredients
For the Roasted Pork:
4 to 5 pounds Boston butt roast
Adobo Seasoning
¾ cup Mojo Criollo
For the Yellow Rice:
1 16-ounce package Vigo yellow rice
More Mojo Criollo, for rice; see directions
For the Black Beans:
1 tbsp. olive oil
1 onion, diced
2 cloves garlic, minced
2 16-ounce cans black beans
2 bay leaves
½ tsp. salt, or to taste
¼ - ½ cup Mojo Criollo
Instructions
To prepare the Boston butt roast:
Pre-heat the oven to 350°F.
Generously season meat with Adobo seasoning.
Place in a Dutch oven, or large pot with a lid, along with the Mojo Criollo.
Cover and cook per package directions on meat; ~ 22 – 26 minutes per pound.
To prepare the yellow rice:
Cook per package directions.
Don't use all water as stated on the package directions; use ½ cup water and ½ cup Mojo Criollo.
To prepare the black beans:
In a medium pan, over medium heat, sauté onions in olive oil for about 10 minutes.
Add garlic; cook for 2 more minutes.
Add beans, bay leaves, salt and Mojo Corillo.
Simmer for about 10 minutes or until beans are soft.
