Savory Cajun Chicken over Creamy Parmesan Linguine

Ingredients
  

  • 2 boneless, skinless chicken breasts, cut into strips
  • 12-ounces linguine pasta
  • 2 tbsp. Cajun seasoning
  • 1 tsp. smoked paprika
  • 4 cloves garlic, minced
  • ½ cup grated Parmesan cheese
  • 1 tbsp. olive oil
  • ½ cup heavy cream
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish, optional

Instructions
 

  • Cook linguine according to package directions; reserve ½ cup pasta of the water before draining set aside.
  • Season chicken strips with 1-½ tbsp. Cajun seasoning and 1 tsp. smoked paprika.
  • In a large skiller, over medium-high heat, sauté the chicken in the olive oil over cooked through; about 3 to 4 minutes per side.
  • Remove the chicken; add garlic and remaining Cajun seasoning to the pan; cook 30 seconds.
  • Add the pasta water and heavy cream; bring to a simmer.
  • Add the Parmesan; stir until melted.
  • Return the chicken to the pan; add the pasta; and toss until well coated.
  • Serve garnished with additional Parmesan, if desired.
