Pre-heat oven to 350°F.
Peel, devein, and cut squash into bit sized chunks
Place butternut squash on a baking sheet lined with parchment paper.
Coat butternut squash with olive olive oil, salt and pepper.
Sprinkle top with curry powder and toss to ensure squash is evenly coated.
Before placing in oven, sprinkle a little more curry powder on top of squash.
Place in oven and bake for 30 minutes.
