Pre-heat the oven to 350°F.
Prepare a loaf pan with a coat of non-stick spray; set aside.
In a medium bowl, whisk together flour, baking powder and salt.
In a large bowl, mix together the Greek yogurt, sugar, eggs, oil and vanilla.
Slowly add the dry ingredients to the wet, mixing until just combined.
Fold in the diced strawberries.
Pour the batter into the loaf pan.
Place in the pre-heated oven and bake until a toothpick inserted in the the center comes out clean; about 50 minutes.
Remove from the oven and allow to cool for a 2 to 3 minutes on the countertop.
Turn cake over on a cooling rack and allow to cool fully.
