Strawberry Yogurt Pound Cake

Ingredients
  

For the Strawberry Yogurt Pound Cake

  • 1-½ cups all-purpose flour
  • 2 tsp. baking powder
  • ½ tsp. salt
  • 1 cup plain Greek yogurt
  • 1 cup granulated sugar
  • 3 large eggs
  • ½ cup vegetable oil
  • 1-½ tsp. vanilla extract
  • 1 cup strawberries. diced

For the Glaze:

  • 2 cups confectioners' sugar
  • ½ cup strawberries, mashed

Instructions
 

To prepare the pound cake:

  • Pre-heat the oven to 350°F.
  • Prepare a loaf pan with a coat of non-stick spray; set aside.
  • In a medium bowl, whisk together flour, baking powder and salt. 
  • In a large bowl, mix together the Greek yogurt, sugar, eggs, oil and vanilla.
  • Slowly add the dry ingredients to the wet, mixing until just combined.
  • Fold in the diced strawberries.
  • Pour the batter into the loaf pan.
  • Place in the pre-heated oven and bake until a toothpick inserted in the the center comes out clean; about 50 minutes.
  • Remove from the oven and allow to cool for a 2 to 3 minutes on the countertop.
  • Turn cake over on a cooling rack and allow to cool fully.

To prepare glaze and serve the pound cake:

  • In a small bowl, combine confectioners' sugar and strawberries to form the glaze.
  • Pour the glaze over the completely cooled pound cake. 
  • Allow the glaze to set before slicing and serving.
