WW Chocolate Pudding

WW Chocolate Pudding

Serves 4; with only 1 WW point for all 4 servings; ¼ point per serving; however, WW does not have a means to record fractional points.

Ingredients
  

  • 2 cups fat-free cottage cheese
  • ⅓ cup monk fruit sweetener with erythritol
  • 2-⅔ tbsp. cocoa powder
  • 1 tsp. vanilla extract

Instructions
 

  • In a food processor, process the cottage cheese, on high speed, until smooth; 1 to 2 minutes.
  • Stop to scrape the sides of the bowl, as necessary.
  • Add the monk fruit sweetener, cocoa powder and vanilla; process until well combined; 30 seconds to 1 minute.
  • Spoon into 4 individual bowls and serve.

Notes

Make ahead, spoon into individual bowls and refrigerate for up to three days.
