WW Make-Ahead Bean Salad

WW Make-Ahead Bean Salad

Serves 6 with zero WW points per serving.

Ingredients
  

  • 1 15.0-ounce can chickpeas, rinsed and drained
  • 1 15.0-ounce can kidney beans, rinsed and drained
  • 1 15.0-ounce can black beans, rinsed and drained
  • 1 cup cucumber, sliced and chopped
  • 1 cup grape tomatoes, halved
  • 1 yellow bell pepper, diced
  • ½ red onion, diced
  • ½ cup pickle chips, chopped
  • ⅓ cup fresh parsley, chopped
  • 2 tbsp. pickle juice
  • 2 tbsp. distlled white vinegar
  • ¾ tsp. salt
  • ½ tsp. black pepper

Instructions
 

  • In a large bowl, toss all ingredients until well-combined.
  • Serve chilled or at room temperature.
