Oven Roasted Parmesan Squash and Zucchini

Ingredients
  

  • 2 small zucchini 
  • 2 small yellow squash 
  • 3 cloves garlic, finely minced or 1 tbsp. garlic powder
  • 2 tbsp. olive oil
  • 1 cup parmesan cheese, grated
  • Freshly cracked black pepper, to taste

Instructions
 

  • Pre-heat the oven to 350ºF.
  • Begin by cutting the squash and zucchini in to ½-inch thick slices.
  • In a bowl, mix together garlic and olive oil.
  • Toss the squash and zucchini in the mixture.
  • Line the slices up on a sheet pan; cover with Parmesan cheese.
  • Place in the pre-heated oven for 30 minutes or until cheese is bubbly and golden brown.
  • Remove from the oven; season with fresh cracked black pepper; serve immediately.
