Oven Roasted Parmesan Squash and Zucchini
Ingredients
- 2 small zucchini
- 2 small yellow squash
- 3 cloves garlic, finely minced or 1 tbsp. garlic powder
- 2 tbsp. olive oil
- 1 cup parmesan cheese, grated
- Freshly cracked black pepper, to taste
Instructions
- Pre-heat the oven to 350ºF.
- Begin by cutting the squash and zucchini in to ½-inch thick slices.
- In a bowl, mix together garlic and olive oil.
- Toss the squash and zucchini in the mixture.
- Line the slices up on a sheet pan; cover with Parmesan cheese.
- Place in the pre-heated oven for 30 minutes or until cheese is bubbly and golden brown.
- Remove from the oven; season with fresh cracked black pepper; serve immediately.
