Honey Whipped Feta with Garlic Herb Roasted Olives Dip

Ingredients
  

For the Roasted Olives:

  • 2 cups mixed olives, pitted
  • ⅓ cup extra virgin olive oil
  • 6 cloves garlic, smashed
  • 1 shallot, quartered
  • 1 lemon, quartered
  • 2 sprigs fresh thyme
  • 2 sprigs fresh oregano
  • Chili flakes, to taste

For the Honey Whipped Feta:

  • 1 8-ounce block feta cheese
  • 3-ounces cream cheese, at room temperature
  • 2 to 3 tbsp. honey
  • Black pepper, to taste
  • Bread or crackers, for serving

Instructions
 

To prepare the roasted olives:

  • Pre-heat the oven to 450° F.
  • In a baking dish, combine the olives, olive oil, garlic, shallot, lemon, thyme, oregano and a big pinch of chili flakes.
  • Place in the pre-heated oven and bake 20 to 25 minutes or until the garlic turns golden and the oil is sizzling.

To prepare the honey whipped feta:

  • In a food processer, combine all ingredients in a food processor and pulse until smooth and creamy.
  • The feta can be made ahead; covered in an airtight container; placed in the refrigeration for up to 3 days.

To assemble and serve:

  • When ready to use, spoon the feta into a serving bowl and top with the warm olives.
  • Serve with bread or crackers.
