Honey Whipped Feta with Garlic Herb Roasted Olives Dip

For the Roasted Olives:

To prepare the roasted olives:
- Pre-heat the oven to 450° F.
- In a baking dish, combine the olives, olive oil, garlic, shallot, lemon, thyme, oregano and a big pinch of chili flakes.
- Place in the pre-heated oven and bake 20 to 25 minutes or until the garlic turns golden and the oil is sizzling.
To prepare the honey whipped feta:
- In a food processer, combine all ingredients in a food processor and pulse until smooth and creamy.
- The feta can be made ahead; covered in an airtight container; placed in the refrigeration for up to 3 days.
To assemble and serve:
- When ready to use, spoon the feta into a serving bowl and top with the warm olives.
- Serve with bread or crackers.
