Omar Garcia’s Mini-McGriddle Bites
This recipe makes approximately 48 mini-pancake muffins.
Ingredients
- 2 cups no eggs required pancake mix
- 1-½ cups water
- 1-pound breakfast sausage, your choice
- 1 cup shredded cheddar cheese
- ¼ cup maple syrup
Instructions
- Pre-heat the oven to 400°F.
- Spray the mini-muffins pans with a non-stick baking spray.
- In a skillet, over medium high heat, brown the breakfast sausage.
- Drain the grease really well; set aside.
- In a medium bowl, mix the pancake mix with the water according to the directions on the box.
- Stir in the cooked sausage, cheese and syrup.
- Pour into the greased mini-muffin pans.
- Place in the pre-heated oven and bake for 12 – 15 minutes.
- Remove from the oven and serve with maple syrup for dipping.
