Omar Garcia’s Mini-McGriddle Bites

This recipe makes approximately 48 mini-pancake muffins.

Ingredients
  

  • 2 cups no eggs required pancake mix
  • 1-½ cups water
  • 1-pound breakfast sausage, your choice
  • 1 cup shredded cheddar cheese
  • ¼ cup maple syrup

Instructions
 

  • Pre-heat the oven to 400°F.
  • Spray the mini-muffins pans with a non-stick baking spray.
  • In a skillet, over medium high heat, brown the breakfast sausage.
  • Drain the grease really well; set aside.
  • In a medium bowl, mix the pancake mix with the water according to the directions on the box.
  • Stir in the cooked sausage, cheese and syrup.
  • Pour into the greased mini-muffin pans.
  • Place in the pre-heated oven and bake for 12 – 15 minutes.
  • Remove from the oven and serve with maple syrup for dipping.
