Sweet Potato Fries
Ingredients
For the Sweet Potato Fries:
- 1 large sweet potato
- 2 tbsp. olive oil
- 1 tbsp. fresh rosemary, chopped
- 1 tsp. salt
- 1 tsp. pepper
For the Greek Yogurt Chive Dip:
- 1 cup plain Greek yogurt
- 1 tbsp. lemon juice
- 2 tbsp. chives
- ¼ tsp. salt
- ¼ tsp. pepper
Instructions
To prepare the sweet potato fries:
- Pre-heat oven to 425°F.
- Cut sweet potato into fries.
- In a large bowl, combine fries, olive oil, rosemary, salt and pepper; mix thoroughly.
- On a baking sheet, lined in parchment paper, place fries in a single layer.
- Bake for 20 – 25 minutes, flipping halfway through.
To prepare the Greek yogurt chive dip:
- In a small bowl, combine all dip ingredients.
- Set aside, in the refrigerator, until ready to use.
Notes
This recipe is easily modified to use multiple sweet potatoes if you are serving a large group. Simply increase all ingredients, one for one, for each additional potato you decide to use.
