Asparagus Roll-ups
Ingredients
- 1 15-ounce can asparagus spears, drained
- 1 loaf white bread
- Butter or margarine, melted
- Sharp cheddar cheese, grated
- Parsley, finely chopped
Instructions
- Cut the crusts from the bread; save the crusts to make croutons.
- Roll the bread with a rolling pin until quite thin.
- Brush the bread with the melted butter; sprinkle with cheddar cheese.
- Add an asparagus spear to each bread slice, placing it near the edge.
- Roll the bread up around the asparagus so it ends up looking like a cigarette.
- Place on plastic wrap or foil; continue with the remaining bread, cheese and asparagus spears.
- Seal roll ups in the plastic wrap or foil and freeze.
- When ready to serve, pre-heat oven to 375° F.
- Place frozen roll ups on a baking sheet and bake for about 20 minutes or until golden brown.
- Remove from oven, sprinkle serving plate with chopped parsley and place one or two roll ups on each plate.
- Serve immediately.
Notes
This recipe makes a great dish which can be served in place of a salad or soup.
