Asparagus Roll-ups

Ingredients
1 15-ounce can asparagus spears, drained
1 loaf white bread
Butter or margarine, melted
Sharp cheddar cheese, grated
Parsley, finely chopped
Instructions
Cut the crusts from the bread; save the crusts to make croutons.
Roll the bread with a rolling pin until quite thin.
Brush the bread with the melted butter; sprinkle with cheddar cheese.
Add an asparagus spear to each bread slice, placing it near the edge.
Roll the bread up around the asparagus so it ends up looking like a cigarette.
Place on plastic wrap or foil; continue with the remaining bread, cheese and asparagus spears.
Seal roll ups in the plastic wrap or foil and freeze.
When ready to serve, pre-heat oven to 375° F.
Place frozen roll ups on a baking sheet and bake for about 20 minutes or until golden brown.
Remove from oven, sprinkle serving plate with chopped parsley and place one or two roll ups on each plate.
Serve immediately.
Notes
This recipe makes a great dish which can be served in place of a salad or soup.
