Asparagus Roll-ups

Ingredients
  

  • 1 15-ounce can asparagus spears, drained
  • 1 loaf white bread
  • Butter or margarine, melted
  • Sharp cheddar cheese, grated
  • Parsley, finely chopped

Instructions
 

  • Cut the crusts from the bread; save the crusts to make croutons.
  • Roll the bread with a rolling pin until quite thin. 
  • Brush the bread with the melted butter; sprinkle with cheddar cheese.
  • Add an asparagus spear to each bread slice, placing it near the edge. 
  • Roll the bread up around the asparagus so it ends up looking like a cigarette.
  • Place on plastic wrap or foil; continue with the remaining bread, cheese and asparagus spears. 
  • Seal roll ups in the plastic wrap or foil and freeze.
  • When ready to serve, pre-heat oven to 375° F.
  • Place frozen roll ups on a baking sheet and bake for about 20 minutes or until golden brown.
  • Remove from oven, sprinkle serving plate with chopped parsley and place one or two roll ups on each plate. 
  • Serve immediately.

Notes

This recipe makes a great dish which can be served in place of a salad or soup.
