Key West Corn Fritters

Ingredients
  

  • 1 can whole kernel corn
  • 2 eggs
  • Salt and pepper, to taste
  • 1/2 cup flour
  • 1 tsp. baking powder
  • ½ cup shredded cheese
  • ½ tbsp. butter
  • 2 tbsp. cooking oil

Instructions
 

  • Drain corn and discard liquid.
  • Put eggs, salt and pepper in a bowl and beat.
  • Add flour and baking powder, whisk until smooth.
  • Add corn and cheese; stir well until blended.
  • In a saucepan, over medium heat, place butter and oil and heat until bubbly.
  • Drop corn mixture, in spoonful lots, into saucepan.
  • When golden, turn and cook other side.
  • When both sides browned, remove from saucepan and drain on absorbent paper and serve.
