Key West Corn Fritters
Ingredients
- 1 can whole kernel corn
- 2 eggs
- Salt and pepper, to taste
- 1/2 cup flour
- 1 tsp. baking powder
- ½ cup shredded cheese
- ½ tbsp. butter
- 2 tbsp. cooking oil
Instructions
- Drain corn and discard liquid.
- Put eggs, salt and pepper in a bowl and beat.
- Add flour and baking powder, whisk until smooth.
- Add corn and cheese; stir well until blended.
- In a saucepan, over medium heat, place butter and oil and heat until bubbly.
- Drop corn mixture, in spoonful lots, into saucepan.
- When golden, turn and cook other side.
- When both sides browned, remove from saucepan and drain on absorbent paper and serve.
