Skinny Greek Herb Dip

Ingredients
  

  • 2 cups nonfat Greek yogurt
  • 4 – 6 scallions, chopped
  • 1/2 jalapeno, seeded and finely chopped
  • 1 clove garlic, peeled and minced
  • 1/2 cucumber, peeled and finely diced
  • 3 tbsp. fresh cilantro, chopped
  • 3 tbsp. fresh mint, chopped
  • Salt and pepper, to taste
  • Assorted raw vegetables, optional
  • Pita chips, optional

Instructions
 

  • In a medium bowl, stir together the yogurt, scallions, jalapeno, garlic, cucumber, and most of the cilantro and mint (reserving a little to sprinkle on top as a garnish) until well blended.
  • Add salt and pepper to taste.
  • Cover and chill for at least one hour.
  • When ready to serve, transfer the dip to a serving bowl and top with the reserved cilantro and mint.
  • Serve with an assortment of raw vegetables and/or pita chips.
