Amish Tuna and Egg Salad
Ingredients
- 2 cans tuna, drained
- 3 eggs, hardboiled, peeled and chopped
- 4 green onions, including green tops, thinly sliced
- 1 rib celery, finely chopped
- 1/3 cup mayonnaise
- 3 tbsp. sweet and spicy pickle relish
- Salt and pepper, to taste
- Bread, rolls or croissants, your choice
- Smoked paprika, to garnish
Instructions
- Combine all ingredients in a mixing bowl.
- Cover and chill until ready to use.
- Pile generously onto your favorite bread, rolls, or croissants, and garnish with a sprinkle of smoked paprika.
Good food all around.
I made this on Sunday and it’s really excellent. Just went with sweet relish. Next time I might add 4 hardboiled eggs to balance the mixture. Had it on rye bread with honey mustard dressing and YUMMY!
