Bacon Jack Breakfast Burritos
Ingredients
For the Scrambled Eggs:
- 4 large eggs
- 2 tbsp. sour cream
- ¼ tsp. black pepper
- Pinch of salt
- ½ tsp. chili paste or chopped jalapeño peppers, optional
For the Burritos:
- 4 ounces Monterey Jack or Pepperjack cheese, grated
- 4 slices smoked bacon, pre-cooked
- 2 ten-inch flour or corn tortillas
Instructions
To prepare the scrambled eggs:
- Using a non-stick medium skillet, over medium heat, mix together the eggs, sour cream, pepper, salt and jalapeños.
- Cook to a soft scramble; set aside to cool slightly
To assemble the burritos:
- Place half of the scrambled eggs, just off center on both the tortillas.
- Top with half of the bacon and cheese for each burrito.
- Fold the sides in and roll up the burrito.
- Place the burritos in a panini press and cook for 3 to 4 minutes until the cheese is melted; alternatively, cook in a lightly oiled cast iron pan for a couple of minutes per side.
- Serve with homemade guacamole and salsa.
