Bacon Jack Breakfast Burritos

Ingredients
  

For the Scrambled Eggs:

  • 4 large eggs
  • 2 tbsp. sour cream
  • ¼ tsp. black pepper
  • Pinch of salt
  • ½ tsp. chili paste or chopped jalapeño peppers, optional

For the Burritos:

  • 4 ounces Monterey Jack or Pepperjack cheese, grated
  • 4 slices smoked bacon, pre-cooked
  • 2 ten-inch flour or corn tortillas

Instructions
 

To prepare the scrambled eggs:

  • Using a non-stick medium skillet, over medium heat, mix together the eggs, sour cream, pepper, salt and jalapeños.
  • Cook to a soft scramble; set aside to cool slightly

To assemble the burritos:

  • Place half of the scrambled eggs, just off center on both the tortillas.
  • Top with half of the bacon and cheese for each burrito.
  • Fold the sides in and roll up the burrito.
  • Place the burritos in a panini press and cook for 3 to 4 minutes until the cheese is melted; alternatively, cook in a lightly oiled cast iron pan for a couple of minutes per side.
  • Serve with homemade guacamole and salsa.
