½ tsp. chili paste or chopped jalapeño peppers, optional
For the Burritos:
4 ounces Monterey Jack or Pepperjack cheese, grated
4 slices smoked bacon, pre-cooked
2 ten-inch flour or corn tortillas
Instructions
To prepare the scrambled eggs:
Using a non-stick medium skillet, over medium heat, mix together the eggs, sour cream, pepper, salt and jalapeños.
Cook to a soft scramble; set aside to cool slightly
To assemble the burritos:
Place half of the scrambled eggs, just off center on both the tortillas.
Top with half of the bacon and cheese for each burrito.
Fold the sides in and roll up the burrito.
Place the burritos in a panini press and cook for 3 to 4 minutes until the cheese is melted; alternatively, cook in a lightly oiled cast iron pan for a couple of minutes per side.
