Buffalo Hummus Stuffed Sweet Pepper Poppers

Ingredients
  

  • 10-ounces plain hummus
  • 1/4 cup gluten-free buffalo wing sauce
  • 2 large green onions, chopped
  • 1/4 cup feta cheese, crumbled
  • Pinch cayenne pepper
  • 1-pound mini sweet peppers

Instructions
 

  • Add hummus and buffalo wing sauce to a bowl; mix until well combined.
  • Add green onions, feta cheese, and cayenne pepper; mix to combine.
  • Scoop mixture into a large Ziploc bag and refrigerate until ready to use.
  • With a small sharp knife, slice the tops off the mini peppers; remove seeds and/or membranes inside peppers.
  • Snip the corner off the bag with the buffalo hummus; fill the mini peppers and serve.

Notes

Hummus can be made ahead of time, but wait to fill peppers until just before serving.
