Chewy Honey Granola Bars

Ingredients
  

  • 3 cups old-fashioned oats
  • 2 cups unsweetened puffed wheat cereal
  • 1 cup all-purpose flour
  • 1/3 cup walnuts, chopped
  • 1/3 cup raisins
  • 1/3 cup miniature semi-sweet chocolate chips
  • 1 tsp. baking soda
  • 1 tsp. ground cinnamon
  • 1 cup honey
  • 1/4 cup butter, melted
  • 1 tsp. vanilla extract

Instructions
 

  • Pre-heat oven to 350°F.
  • In a large bowl, combine the first 8 ingredients.
  • In a small bowl, combine honey, butter and vanilla; pour over oat mixture; mix well.
  • Mixture will be sticky.
  • Press into a 13 x 9-inch baking pan coated with cooking spray.
  • Bake 14 – 18 minutes or until set and edges are lightly browned.
  • Cool on a wire rack.
  • Once completely cooled, cut into bars.

Notes

Greasing the spoon, or your hands, when pressing the mix in the pan. It is very sticky and the margarine helps with this.
Try switching out the ingredients and, add blueberries or cherries.
Try changing the raisins to cranberries and the walnuts to almonds or pistachios. 
If you have trouble with them being crumbly, just pat them down with the bottom of a glass, the same method used to do rice krispie treats before baking.
