Cold Garlic and Sesame Soy Marinated Green Beans

Ingredients
  

  • 1-pound green beans
  • 1/3 cup low sodium soy sauce
  • 2 – 3 cloves garlic, finely minced
  • 3 tbsp. sesame oil
  • 1/2 tbsp. sugar

Instructions
 

  • In a large pot of boiling water, blanch the green beans for 4 – 5 minutes, no longer.
  • While green beans are blanching, use a large bowl or pot, place an inch of ice cubes in bottom and then pour in enough water to cover the ice and accommodate the green beans.
  • Once the green beans have reached their 4 -5 minutes of cooking, drain and immediately throw them in the ice bath.
  • Once cooled, drain the beans again.
  • In a large Ziploc bag, place all ingredients, zip tightly and shake around until the green beans are completely covered.
  • Let cool in the refrigerator for at least an hour, toss again, return to refrigerator for an additional hour, or longer.
  • Just prior to serving cold, toss again.
