In a large skillet, over medium-high heat, add the vegetable oil, garlic and ginger; cook for 2 to 3 minutes; stirring constantly.
Add the dried red chili flakes, if using, and stir into the garlic and ginger mixture.
Next, add the light soy sauce, dark soy sauce, sesame seeds and prepared noodles; toss to combine and coat; cook for 3 – 5 minutes or until noodles are heated through.
Turn off heat; add sesame oil and green onions; toss to coat.
Garnish with extra toasted sesame seeds and sliced green onions prior to serving.
