Holiday Breakfast Frittata

Ingredients
  

  • 1 dozen large eggs
  • 2 tbsp. water
  • 1/4 cup olive oil
  • 4 ounces prosciutto, diced
  • 3 large potatoes, peeled and sliced
  • 1 cup Gruyere cheese, fresh grated
  • 2 scallions or shallot stalks, sliced thin, for garnish
  • 1 tsp. kosher salt
  • 1/2 tsp. white pepper

Instructions
 

  • Pre-heat oven to 400°F
  • Heat olive oil in large oven safe 9-inch pan, or cast iron if available, over medium heat.
  • Add prosciutto or ham and sauté; add potatoes and sauté more; till both are browned and softened.
  • Remove from heat.
  • Spread around in the pan evenly and set aside.
  • In a bowl whisk eggs and water with salt and pepper.
  • Sprinkle Gruyere atop potatoes and prosciutto and allow for cheese to start to melt.
  • Pour the egg mix into the pan and place in oven.
  • Bake for 8 to 10 minutes or until set.
  • Cool for 5 to 10 minutes and sprinkle with scallion or shallot garnish.

Notes

Ham can be substituted for the prosciutto.
