Holiday Breakfast Frittata
Ingredients
- 1 dozen large eggs
- 2 tbsp. water
- 1/4 cup olive oil
- 4 ounces prosciutto, diced
- 3 large potatoes, peeled and sliced
- 1 cup Gruyere cheese, fresh grated
- 2 scallions or shallot stalks, sliced thin, for garnish
- 1 tsp. kosher salt
- 1/2 tsp. white pepper
Instructions
- Pre-heat oven to 400°F
- Heat olive oil in large oven safe 9-inch pan, or cast iron if available, over medium heat.
- Add prosciutto or ham and sauté; add potatoes and sauté more; till both are browned and softened.
- Remove from heat.
- Spread around in the pan evenly and set aside.
- In a bowl whisk eggs and water with salt and pepper.
- Sprinkle Gruyere atop potatoes and prosciutto and allow for cheese to start to melt.
- Pour the egg mix into the pan and place in oven.
- Bake for 8 to 10 minutes or until set.
- Cool for 5 to 10 minutes and sprinkle with scallion or shallot garnish.
Notes
Ham can be substituted for the prosciutto.
