Honey Lemon Vinaigrette on Peach Bacon Salad
Ingredients
For the Vinaigrette:
- 3 tbsp. lemon juice, freshly squeezed
- 1/2 tsp. lemon zest
- 2 tbsp. extra virgin olive oil
- Pinch salt and pepper, to taste
- 1 tsp. honey
- 1 tsp. fresh thyme or other fresh herbs, chopped
For the Salad:
- Romaine lettuce
- Cucumber, diced
- Fresh peach, sliced
- Smoked bacon, crisply cooked and chopped
Instructions
- In a small bowl, whisk together all of the ingredients for the vinaigrette or shake well in a covered mason jar.
- Pour over the assembled salad ingredients, toss and serve immediately.
