Newfoundland Chicken and Dumplings
Ingredients
For the Chicken and Broth:
- 1 whole chicken, cut up
- 2 stalks celery, diced
- 1 can sweet peas
- 3 carrots, julienne or chopped
- 1 large sweet onion, diced
- 1 can cream of chicken soup
- 2 tbsp. parsley
- 1 tsp. salt
- 1 tsp. pepper
- 2 14-ounce cans chicken broth each
For the Dumplings:
- 1 1/2 cups all-purpose flour
- 1/2 tsp. baking soda
- 1 tsp. poultry seasoning or chicken bouillon powder
- 1/4 tsp. salt
- 3/4 cup buttermilk
- 1 egg
Instructions
To prepare the chicken and broth:
- Boil chicken and vegetables in water until done.
- Remove chicken from pot and remove bones.
- Add back to the stock and add cream of chicken soup and broth.
- Add more water, if required to make more liquid for the soup.
- Add salt and pepper, to taste.
To prepare the dumplings:
- Mix flour, seasoning, baking soda, egg, salt and buttermilk until it forms dough.
- Drop spoonful’s into the broth.
- Continue to cook until dumplings are done.
