Newfoundland Chicken and Dumplings

Ingredients
  

For the Chicken and Broth:

  • 1 whole chicken, cut up
  • 2 stalks celery, diced
  • 1 can sweet peas
  • 3 carrots, julienne or chopped
  • 1 large sweet onion, diced
  • 1 can cream of chicken soup
  • 2 tbsp. parsley
  • 1 tsp. salt
  • 1 tsp. pepper
  • 2 14-ounce cans chicken broth each

For the Dumplings:

  • 1 1/2 cups all-purpose flour
  • 1/2 tsp. baking soda
  • 1 tsp. poultry seasoning or chicken bouillon powder
  • 1/4 tsp. salt
  • 3/4 cup buttermilk
  • 1 egg

Instructions
 

To prepare the chicken and broth:

  • Boil chicken and vegetables in water until done.
  • Remove chicken from pot and remove bones.
  • Add back to the stock and add cream of chicken soup and broth.
  • Add more water, if required to make more liquid for the soup.
  • Add salt and pepper, to taste.

To prepare the dumplings:

  • Mix flour, seasoning, baking soda, egg, salt and buttermilk until it forms dough.
  • Drop spoonful’s into the broth.
  • Continue to cook until dumplings are done.
