Newfoundland Chicken and Dumplings

Ingredients
For the Chicken and Broth:
1 whole chicken, cut up
2 stalks celery, diced
1 can sweet peas
3 carrots, julienne or chopped
1 large sweet onion, diced
1 can cream of chicken soup
2 tbsp. parsley
1 tsp. salt
1 tsp. pepper
2 14-ounce cans chicken broth each
For the Dumplings:
1 1/2 cups all-purpose flour
1/2 tsp. baking soda
1 tsp. poultry seasoning or chicken bouillon powder
1/4 tsp. salt
3/4 cup buttermilk
1 egg
Instructions
To prepare the chicken and broth:
Boil chicken and vegetables in water until done.
Remove chicken from pot and remove bones.
Add back to the stock and add cream of chicken soup and broth.
Add more water, if required to make more liquid for the soup.
Add salt and pepper, to taste.
To prepare the dumplings:
Mix flour, seasoning, baking soda, egg, salt and buttermilk until it forms dough.
Drop spoonful’s into the broth.
Continue to cook until dumplings are done.
