Roast Pork with Black Beans and Yellow Rice

Ingredients
  

For the Roasted Pork:

  • 4 to 5 pounds Boston butt roast
  • Adobo Seasoning
  • ¾ cup Mojo Criollo

For the Yellow Rice:

  • 1 16-ounce package Vigo yellow rice
  • More Mojo Criollo, for rice; see directions

For the Black Beans:

  • 1 tbsp. olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 16-ounce cans black beans
  • 2 bay leaves
  • ½ tsp. salt, or to taste
  • ¼ – ½ cup Mojo Criollo

Instructions
 

To prepare the Boston butt roast:

  • Pre-heat the oven to 350°F.
  • Generously season meat with Adobo seasoning.
  • Place in a Dutch oven, or large pot with a lid, along with the Mojo Criollo.
  • Cover and cook per package directions on meat; ~ 22 – 26 minutes per pound.

To prepare the yellow rice:

  • Cook per package directions.
  • Don't use all water as stated on the package directions; use ½ cup water and ½ cup Mojo Criollo.

To prepare the black beans:

  • In a medium pan, over medium heat, sauté onions in olive oil for about 10 minutes.
  • Add garlic; cook for 2 more minutes.
  • Add beans, bay leaves, salt and Mojo Corillo.
  • Simmer for about 10 minutes or until beans are soft.
