Roast Pork with Black Beans and Yellow Rice
Ingredients
For the Roasted Pork:
- 4 to 5 pounds Boston butt roast
- Adobo Seasoning
- ¾ cup Mojo Criollo
For the Yellow Rice:
- 1 16-ounce package Vigo yellow rice
- More Mojo Criollo, for rice; see directions
For the Black Beans:
- 1 tbsp. olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 16-ounce cans black beans
- 2 bay leaves
- ½ tsp. salt, or to taste
- ¼ – ½ cup Mojo Criollo
Instructions
To prepare the Boston butt roast:
- Pre-heat the oven to 350°F.
- Generously season meat with Adobo seasoning.
- Place in a Dutch oven, or large pot with a lid, along with the Mojo Criollo.
- Cover and cook per package directions on meat; ~ 22 – 26 minutes per pound.
To prepare the yellow rice:
- Cook per package directions.
- Don't use all water as stated on the package directions; use ½ cup water and ½ cup Mojo Criollo.
To prepare the black beans:
- In a medium pan, over medium heat, sauté onions in olive oil for about 10 minutes.
- Add garlic; cook for 2 more minutes.
- Add beans, bay leaves, salt and Mojo Corillo.
- Simmer for about 10 minutes or until beans are soft.
