Roasted Brussels Sprouts With Honey and Miso

Ingredients
  

  • 2 tbsp. extra-virgin olive oil
  • 2 tbsp. honey
  • 1 tbsp. red miso paste
  • ½ tsp. kosher salt
  • 1-pound brussels sprouts, trimmed and halved lengthwise
  • 1 lime, halved
  • ¼ cup almonds, roasted and chopped

Instructions
 

  • Heat the oven to 400°F.
  • In a small bowl, whisk together the honey, miso and salt until smooth.
  • In a large bowl, add the brussels sprouts and olive oil; combine completely.
  • Transfer the brussels sprouts to a rimmed baking sheet.
  • Spread out in an even layer and scrape every last drop of the honey-miso mixture from the bowl on top.
  • Place in oven and roast the brussels sprouts for 15 minutes; flip sprouts; continue baking for another 10 minutes or until tender and nicely caramelized; keep in mind baking time may be longer depending on oven.
  • Remove from oven and toss with honey, miso and salt mixture;
  • Squeeze the lime juice over top; give the mixture a good toss; transfer to a serving dish.
  • Sprinkle with the almonds, then serve warm or at room temperature.
