Simple Macaroni Salad

Ingredients
  

For the Salad:

  • 1-pound elbow macaroni pasta
  • 1/4 cup celery
  • 1/4 cup red onion, diced
  • 1/2 cup red bell pepper, diced
  • 1/2 cup frozen peas
  • 1 cup sharp cheddar cheese, cut into small cubes

For the Dressing:

  • 1 cup mayonnaise
  • 1/4 cup distilled vinegar
  • 3 tbsp. granulated sugar
  • 1 tbsp. Dijon mustard
  • 2 tbsp. sweet pickle relish
  • 1 tsp. salt
  • 1/2 tsp. black pepper

Instructions
 

  • Cook the pasta according to package instructions; drain and rinse with cool water.
  • Cook the frozen peas according to package instructions; drain and set aside.
  • In a large bowl, combine pasta, celery, red onion, red bell pepper, peas and cheese.
  • In a small bowl, whisk together the dressing ingredients until smooth and creamy.
  • Pour the dressing into the large bowl and stir to coat evenly.
  • Keep the salad covered and refrigerated until ready to serve.

Notes

Macaroni Salad Recipe can be made up to a day ahead of time; keep refrigerated and stir just before serving.
