Stephanie’s Curry Butternut Squash

Ingredients
  

  • 1 large butternut squash
  • 2 tbsp. curry powder
  • Olive oil
  • Salt and pepper, to taste

Instructions
 

  • Pre-heat oven to 350°F.
  • Peel, devein, and cut squash into bit sized chunks
  • Place butternut squash on a baking sheet lined with parchment paper.
  • Coat butternut squash with olive olive oil, salt and pepper.
  • Sprinkle top with curry powder and toss to ensure squash is evenly coated.
  • Before placing in oven, sprinkle a little more curry powder on top of squash.
  • Place in oven and bake for 30 minutes.
