Stephanie’s Curry Butternut Squash
Ingredients
- 1 large butternut squash
- 2 tbsp. curry powder
- Olive oil
- Salt and pepper, to taste
Instructions
- Pre-heat oven to 350°F.
- Peel, devein, and cut squash into bit sized chunks
- Place butternut squash on a baking sheet lined with parchment paper.
- Coat butternut squash with olive olive oil, salt and pepper.
- Sprinkle top with curry powder and toss to ensure squash is evenly coated.
- Before placing in oven, sprinkle a little more curry powder on top of squash.
- Place in oven and bake for 30 minutes.
