Peel carrots and cut into the desired shape.
Place carrots in a medium bowl and coat with oil and seasoning.
Using a basting and pastry brush, toss carrots until well coated Lightly grease the air fryer basket or tray with cooking oil. Arrange the carrot slices on the air fryer cooking basket or tray.
Give them enough space so they do not overlap.
Use air fry mode at 400°F for 6 minutes.
Open the air fryer, flip each carrot or give them a “shake”; air fry for another 4 - 5 minutes or until golden brown and caramelized crispy edges.
Remove from air fryer, taste and lightly salt, if desired; season with fresh parsley.
