Pre-heat oven to 375°F.
Cut and scoop out the insides of the croissant; i.e., make an oblong bowl inside the croissant.
In a small bowl. place the eggs and milk; whisk until combined.
Add cheddar cheese, bacon, chives, salt and pepper; mix well.
Spoon mixture into the croissant boats.
Place in oven and bake for 20 – 25 minutes.
