Yogurt Parfaits
Ingredients
- ½ cup peanut butter granola
- 1 cup Greek or plain yogurt
- 1 tbsp., plus 1 tsp. maple syrup
- 1 tsp. vanilla extract
- 1 cup frozen or fresh strawberries
- 1 cup fresh blueberries, blackberries, raspberries or a mixture of all three
- ⅛ tsp. cinnamon
Instructions
- In a small bowl, combine the yogurt, 1 tablespoon maple syrup and the vanilla.
- If using frozen, defrost the strawberries in the microwave, keeping the juice that releases as they thaw.
- Using a medium bowl, add the strawbeeries, the berries (blueberries, blackberries and/or raspberries), 1 teaspoon maple syrup and 1 pinch cinnamon; carefully stir to combine well.
- In each glass, layer ½ cup yogurt mixture, a sprinkle of berries and granola, ½ cup yogurt and another sprinkle of berries and granola.
- Best if served immediately.
Notes
The Yogurt Parfaits can also be stored for up to 4 days; however, the granola tends to become soggy. If making ahead for breakfasts, layer it without the granola and add that ingredient just before serving.
