Chex Scotcheroo Stack
Ingredients
For the Cereal Layer:
- 12 cups Chex cereal, your choice, mix different flavors of Chex
- 2 cups light corn syrup
- 2 cups granulated sugar
- 2 cups creamy peanut butter
For the Topping:
- 1 cup creamy peanut butter
- 1 cup chocolate chips
- 1 cup butterscotch chips
Instructions
To prepare the cereal layer:
- Line large trays or cookie sheets with parchment or wax paper.
- Measure Chex cereal into a large heat proof bowl.
- In a saucepan, over medium heat, combine corn syrup and sugar.
- Bring to boil then remove from heat; stir in peanut butter until smooth.
- Pour over cereal and gently fold together until cereal is completely covered.
- Using a large ice cream scoop, scoop out 30 stacks onto prepared trays.
- When cooled and set, prepare the topping.
To prepare the topping:
- In a microwave-safe bowl, add peanut butter, chocolate chips and butterscotch chips.
- Microwave on 50% power for 3 to 4 minutes; stirring every 30 seconds until melted together and smooth.
- Spoon 1 tbsp. of the mixture over each stack.
To assemble the Chex scotcheroo stack:
- Let set at room temperature or put in the refrigerator to speed up the process.
Notes
Mixture can also be pressed into a sprayed sheet pan; then drizzle topping over the top; cut into bars.
