Air Fryer Roasted Carrots

Air Fryer Roasted Carrots

Ingredients

  • 2 medium carrots, sliced into “French-fry” shape sticks
  • 1 tbsp. extra virgin olive or avocado oil
  • Salt and pepper, to taste
  • 1 tsp. seasoning of choice (Herbes de Provence, Complete, Old Bay, etc.)
  • Avocado oil spray
  • 1 tbsp. fresh parsley, chopped
  • Balsamic glaze
  • Feel free to use other spices like garlic, onion powder, paprika, thyme, chipotle, etc.

Instructions

  • Peel carrots and cut into the desired shape.
  • Place carrots in a medium bowl and coat with oil and seasoning.
  • Using a basting and pastry brush, toss carrots until well coated
  • Lightly grease the air fryer basket or tray with cooking oil.
  • Arrange the carrot slices on the air fryer cooking basket or tray.
  • Give them enough space so they do not overlap.
  • Use air fry mode at 400°F for 6 minutes.
  • Open the air fryer, flip each carrot or give them a “shake”; air fry for another 4 – 5 minutes or until golden brown and caramelized crispy edges.
  • Remove from air fryer, taste and lightly salt, if desired; season with fresh parsley.

Notes

Air fryer carrots must be cut into equal pieces so that every slice will cook completely and evenly.
Also, change the side of carrots after a few minutes, while frying, so that they will cook on all sides equally.
Also try using baby carrots; slice them in half lengthwise.
