Pre-heat the oven to 350°F.
Melt the butter or coconut oil in a microwave-safe bowl big enough for the cashews.
Once melted, add cashews to melted butter or coconut oil; add salt and toss until well coated.
Line a rimmed baking sheet with parchment paper for super easy clean-up.
In a single layer, place cashews on the baking sheet and place on the middle rack.
Place in the pre-heated oven and roast for10 to 15 minutes; stirring occasionally.
Once golden brown, remove and allow to cool for at least 15 minutes before using.
