An Omelette in a Bag for One

Ingredients
  

  • 2 eggs
  • 2 slices ham, chopped
  • ½ cup Cheddar cheese, shredded
  • 1 tbsp. onion, chopped
  • 1 tbsp. green bell pepper, chopped
  • 2 tbsp. fresh tomato, chopped
  • 1 tbsp. chunky salsa
  • 2 fresh mushrooms, sliced

Instructions
 

  • Crack two eggs into a large resealable freezer bag; press out as much air as possible; seal the bag shut.
  • Squeeze or shake the bag in order to beat the eggs.
  • Re-open the bag; add all the omelette ingredients (i.e. cheese, ham, pepper, tomato, etc.); carefully reseal the bag.
  • Place the bag in boiling water and allow to cook for 20 minutes or until the mixture is set; use tongs to remove the bag from the pot.
  • Open the bag and let the omelette roll out onto a plate.
  • Garnish with whatever you like and serve.

Notes

You can place up to eight bags in the boiling water at once.
This recipe is just for one – prepare each person’s omelette how they like and remember to label their name on their bag.
Be careful of the bags you use as some may have harmful toxins. Be sure to use BPA-free freezer bags for this recipe.
