Banana Bran Oat Muffins
Ingredients
- 1 cup whole wheat flour
- 1 cup oat bran
- 3/4 cup wheat bran
- 1 cup rolled oats
- 1/2 cup brown sugar, a little more if you prefer them sweeter
- 1-1/2 tsp. baking soda
- 1/2 cup golden raisins
- 1-1/2 cups buttermilk
- 1 large egg
- 1/4 cup canola or vegetable oil
- 1 large banana, or more, if desired
Instructions
- Pre-heat oven to 400°F.
- Grease 1 12-cup muffin pan; set aside.
- In a a medium bowl, mix all dry ingredients together.
- In a separate large bowl, mix wet ingredients together.
- Add the dry ingredients with the wet ingredients; combine until lightly blended.
- Spoon into greased muffin tins until each cup is 3/4 full.
- Bake for 20 to 25 minutes or until a cake tester, inserted in the center of a muffin, comes out dry.
- Remove from oven, let set 5 minutes, on a wire rack; remove from muffin pan.
