Banana Bran Oat Muffins

Ingredients
  

  • 1 cup whole wheat flour
  • 1 cup oat bran
  • 3/4 cup wheat bran
  • 1 cup rolled oats
  • 1/2 cup brown sugar, a little more if you prefer them sweeter
  • 1-1/2 tsp. baking soda
  • 1/2 cup golden raisins
  • 1-1/2 cups buttermilk
  • 1 large egg
  • 1/4 cup canola or vegetable oil
  • 1 large banana, or more, if desired

Instructions
 

  • Pre-heat oven to 400°F.
  • Grease 1 12-cup muffin pan; set aside.
  • In a a medium bowl, mix all dry ingredients together.
  • In a separate large bowl, mix wet ingredients together.
  • Add the dry ingredients with the wet ingredients; combine until lightly blended.
  • Spoon into greased muffin tins until each cup is 3/4 full.
  • Bake for 20 to 25 minutes or until a cake tester, inserted in the center of a muffin, comes out dry.
  • Remove from oven, let set 5 minutes, on a wire rack; remove from muffin pan.
