
Skinny Greek Herb Dip
Ingredients
- 2 cups nonfat Greek yogurt
 - 4 – 6 scallions, chopped
 - 1/2 jalapeno, seeded and finely chopped
 - 1 clove garlic, peeled and minced
 - 1/2 cucumber, peeled and finely diced
 - 3 tbsp. fresh cilantro, chopped
 - 3 tbsp. fresh mint, chopped
 - Salt and pepper, to taste
 - Assorted raw vegetables, optional
 - Pita chips, optional
 
Instructions
- In a medium bowl, stir together the yogurt, scallions, jalapeno, garlic, cucumber, and most of the cilantro and mint (reserving a little to sprinkle on top as a garnish) until well blended.
 - Add salt and pepper to taste.
 - Cover and chill for at least one hour.
 - When ready to serve, transfer the dip to a serving bowl and top with the reserved cilantro and mint.
 - Serve with an assortment of raw vegetables and/or pita chips.
