Simple Macaroni Salad
Ingredients
For the Salad:
- 1-pound elbow macaroni pasta
- 1/4 cup celery
- 1/4 cup red onion, diced
- 1/2 cup red bell pepper, diced
- 1/2 cup frozen peas
- 1 cup sharp cheddar cheese, cut into small cubes
For the Dressing:
- 1 cup mayonnaise
- 1/4 cup distilled vinegar
- 3 tbsp. granulated sugar
- 1 tbsp. Dijon mustard
- 2 tbsp. sweet pickle relish
- 1 tsp. salt
- 1/2 tsp. black pepper
Instructions
- Cook the pasta according to package instructions; drain and rinse with cool water.
- Cook the frozen peas according to package instructions; drain and set aside.
- In a large bowl, combine pasta, celery, red onion, red bell pepper, peas and cheese.
- In a small bowl, whisk together the dressing ingredients until smooth and creamy.
- Pour the dressing into the large bowl and stir to coat evenly.
- Keep the salad covered and refrigerated until ready to serve.
Notes
Macaroni Salad Recipe can be made up to a day ahead of time; keep refrigerated and stir just before serving.
